We are pleased to offer this year’s crop from Toarco, a really stellar operation in the Indonesian island of Sulawesi. Toarco has the reputation of producing some of the best coffee in Sulawesi! It operates its own farm and mill in the Toraja region of the province of South Sulawesi, and receives freshly picked coffee cherries from a number of producers nearby to mill and contribute to what is produced on its own farm. Each of those contributing producers are trained and certified by Toarco and are held to the same high standards of picking, storage and moisture levels to which Toarco holds itself. Many coffees from Sulawesi, because of the traditional wet-hulled processing technique, offer a cup with a ton of body and a rich earthiness, but unfortunately lack much sweetness or acidity to really stand out! Toarco, however, is really unique in Sulawesi in that it processes its cherries with a fully-washed method. This processing method, combined with all the other attention to detail that Toarco gives, translates to cups of incredible clarity, sweetness and complexity. Expect a dense and rich cup with big deep flavors of golden raisin, cocoa nib and maple-syrup sweetness. There is a snappy acidity and a lingering cherry-juice finish.
