About Philly Fair Trade Mexico Chiapas Decaf SWP

* 1lb bag * Our Decaf Mexican coffee is grown in the Chiapas region. It is decaffeinated using the Swiss Mountain Water process to remove most of the caffeine. The terrain of Chiapas is mountainous and jagged, but provides an ideal climate to grow coffee. Chiapas is in the Southern part of Mexico and most people in the area are extremely poor and rely on coffee as a main source of income. The mountainous highlands and dense rainforest are dotted with Mayan archaeological sites and Spanish colonial towns. Chiapas is responsible for 60 percent of Mexico’s coffee production and in addition produces Cacao for export. Most of the coffee is grown on small farms by families in one of the poorest regions of the Country. The coffee is grown at over 4000 feet in the same mountain range as the Guatemalan Huehuetenango region which produces some of the best coffee.
