* 1lb bag * Our Ethiopian coffee is grown in the Yirgacheffe region. Coffee has a long history. You probably know its origins stretch back millennia to the East parts of Africa. It was here that the coffee fruit was pitted and cooked. Ethiopia produces 3% of the worlds’ coffee, is the 7th largest producer, and 30% of the country’s income. Ethiopians consume more coffee than anywhere else in Africa. But did you know that the coffee from which all varietals derive from today, come from a very small part of Ethiopia? Yirgacheffe features a small and grey-green bean, is valued for its spice and wine or chocolate-like taste and floral aroma, its high quality and distinctive flavor. For decades, this has been meticulously hand sorted and harvested. Each batch is wet processed to improve its acidity and enhance its clean floral notes. Full bodied with mild earthy, our Yirgacheffe is certified Fair Trade and Organic. The coffee is dried to 11.5% moisture on raised drying beds made of local materials and cement. The fair trade cooperative consists of small producers, with an average farm size of 750 hectares. The soil is volcanic with high nutrient holding capacity for clay minerals, and is grown at an altitude of 5700 feet This Medium Roast coffee has flavor notes of toasted marshmallow & honeyed grapefruit.
