About Bootstrap Coffee Roasters Costa Rica Lupe Farm

This farm is owned and operated by David Rivera Urena and is located in the region of San Isidro de Leon Cortes. Finca Lupe (Lupe Farm) is one of a handful of excellent coffee producers that contribute to the Don Pepe Micromill, one of the most highly-regarded mills in Costa Rica! This is a honey-processed coffee. This style of processing (or, removing the seed from the fruit) is still relatively new and there is tons of room for innovation. The Don Pepe micromill is on the forefront of that innovation, and does an excellent job of producing some of the sweetest coffees from Costa Rica that we have ever tasted! This process begins with the whole fruit. It is depulped (the outer skin and most of the flesh of the fruit (mucilage) is removed). The equipment used is able to to leave a certain percentage of fruit on the seed. It is then stripped off and the seeds are dried and ready for shipment to us. Different percentages of mucilage and different contact times can yield drastically different results! Most coffees from Costa Rica are processed by the washed method, which removes all of that fruit up front. This tends to yield a sweet, clean cup. We find that honey-process Costa Ricas, because of that extra contact time with the fruit, tend to yield incredibly sweet and dynamic cups. This offering from Lupe Farm is a perfect example! This coffee is crisp with soft flavors of sour cherry, sugar cane and macadamia nut. The body is velvety and the finish is super-clean leaving a refined sugar aftertaste. Fantastic!
