We're proud to be able to offer this really great microlot from the Cauca region! Producer Willian Dario Camayo runs a farm just 2 hectares (about 5 acres) in size and only recently (in 2011) switched the focus of his farm from other plants to growing coffee. He grows the Castillo variety. This is a bit of a controversial variety in specialty coffee. While it is resistant to the disease known as rust (which can be devastating as it spreads quickly), the variety's lineage can be traced back to a Robusta/Arabica hybrid. Because of this, many coffee professionals shy away from it. For us, though, the proof is in the cup. We don't think we have ever tasted a Castillo of this quality! We are super proud to be able to offer the fruit of all the hard work of Willian and his crew! In the cup, look for soft and delicate notes of nectarine, lavender, and sweet honeydew melon.
